Okay...I'M BACK! Taking it one entry at a time here.
After extensive searching, I came across Hellsongs. Don't let the name fool ya, they take metal classics and reinterpret them as acoustic folk songs. That isn't exactly my cup of tea, nor will it ever be, but I am in love with their creativeness and they TRULY make it their own! I've only hears a few songs of theirs but it's mighty impressive you can seriously tell they put in a lot of serious work into it unlike majority of covers today where it's so sloppily and thoughtless. I'll likely post more of them in the future.
